My Thanksgiving Thanks




















Sweet Potato Pie                                                    Best of Cajun Cooking by Nell Millang

Ingredients
2 cups cooked and mashed sweet potatoes
3/4 cup white sugar

1/2 cup coconut
2 teaspoons vanilla
1/2 cup evaporated milk
1/4 pound butter, softened
3 eggs beaten
1/4 teaspoon salt
1/2 teaspoon ground cinnamon

1 cup pecans
1 (9 inch) unbaked pie crust


Stir all ingredients except pie crust in large bowl.
Pour into unbaked pie crust. Bake in preheated 450
degree oven for 10 minutes. Reduce heat to 350-degrees.
Bake about 35 minuest or until knife inserted in center
comes out clean. Cool; cover with meringue.

Meringue
Beat 3 egg whites until frothy. Gradually add 1/3 cup white
sugar. Beat until stiff. Beat in 1/2 teaspoon lemon extract.
Pile on pie. Brown in 325 degree oven about 15 minutes.
Chill before serving. Refrigerate leftovers.
